Although the highways to Las Vegas and back are quite desolate and seemingly lifeless (Death Valley included), there is a certain quite beauty and grandeur about it all. Those long, straight highways offer the traveler much needed time for contemplation. No daydreaming, though, or falling asleep at the wheel!

It’s very hard for me to eat well while traveling. I’ll be honest about that. The one important thing for me is to eat small portions and keep my energy up. That is the one thing I’m doing quite well now, regardless of where I am.

I don’t go to a restaurant and “pig out” until it’s food coma time. Overloading the system is the worst.

Instead, I usually finish half of the food and box the rest up for later. So, I’ve been eating leftovers from yesterday.

Breakfast – 8am

Starbucks Mocha ~ tall, soy, no whip
Pastry ~ small, lemon

Late Morning – 10:30am

Didn’t finish.

Starbucks Iced Mocha ~ decaf, tall, soy, no whip
Potato Chips ~ air-popped, barbecue, 1 small bag

Lunch – 1pm

Ate small portions.

Kung Pao Chicken ~ leftovers, small serving
Brown Rice ~ small serving
Water ~ 1 bottle

Afternoon Tea – 4pm

Trail Mix ~ almonds, walnuts, dried bluberries, raisins, organic

Dinner – 8pm

Szechuan Fish ~ 1 small serving
Sweet & Pungent Shrimp ~ 3 pieces
Egg Roll ~ 1 piece
Shrimp Egg Roll ~ 1 piece
White Rice ~ 1 small cup
Fortune Cookie ~ 1 piece
Water ~ bottled
