Gluten Sensitivity: A Real Issue For Me
One of my musical colleagues told me a few weeks ago that it might not be the gluten that’s causing problems for people who are gluten sensitive, but actually the pesticides in the wheat.
So I got to thinking about it, and even did some research online that seemed to point to this pesticide issue rather than any problems with gluten.
So I started reading further and found out that ‘Old World’ sourdough bread could be the answer to the gluten problem, being that most breads available at the supermarket are processed in a factory. Perhaps buying bread that’s created by hand in the old world tradition might be the answer.
In recent weeks I’ve tried bread again, buying Old World sourdough from Whole Foods Market. Supposedly, they let the bread ferment longer which allows the beneficial probiotics to eat up the gluten. At least that’s what I read.
To make a long story short, I tried the bread for a few weeks and started to develop IBS symptoms which I’d never experienced before!
And now, I’m shunning all breads to see if these IBS symptoms go away. And eating bread again was the ONLY change in my diet in the past several months, so I know it HAS to be the bread.
I don’t think I have Celiac Disease per se, but I do have a sensitivity to gluten now, and it might’ve been because in the past I’d eaten all the fake meats, sausages, etc. which contain even more gluten than bread!
In essence, eating more whole foods is better than eating processed foods, even if it’s vegan processed meats.
