Randomguru’s Cashew Chicken (Vegan)




Here is my own version of Vegan Cashew Chicken, and although there are countless recipes online already, this is my own take on my favorite Szechuan dish, combining what I feel are the best of various recipes out there.

I’ve tried my best to simulate pieces of chicken by using tofu and breaking it apart into bite-sized pieces, instead of cutting them into cubes.

Szechuan Cashew Chicken was my all-time favorite back in my early 20’s when my wife and I were still dating. Now that I’ve been a Vegan for many years, I still miss this Szechuan dish, and now I can replicate it and still be 100% Vegan.

Anyway, enough beating around the bush. Let’s get to the recipe!

Ingredients

Sauce
  • 4 tbsp – Hoisin Sauce
  • 2 tbsp – Soy Sauce
  • 1 tbsp – Rice Vinegar
  • 1/2 cup – Water
  • 1/2 tsp – Sesame Oil
  • 1 tbsp – Raw Sugar
Tofu Coating
  • 1/2 cup – Corn Starch or Potato Starch
  • 1 tsp – Baking Soda
  • 1 tsp – Salt
  • 1 tsp – Pepper
  • 1 tbsp – Garlic Powder
Stir Fry
  • 1 lb – Super Firm Tofu (from Trader Joe’s)
  • 1 cup – Raw Cashews
  • 3 stalks – Green Onions
  • 4 cloves – Garlic (minced)
  • 1 tsp – Ginger (grated)
  • 3 tbsp – Canola Oil
  • 3-5 Red Chilies
  • 1 cup – Mushrooms (optional)

Method

Tofu Preparation
  • Break Tofu apart into bite-size pieces to resemble Chicken pieces, and place in a large bowl.
  • Add Tofu Coating mixture to the bowl and stir it up.
  • Heat a frying pan and brush some of the Canola Oil onto the surface of the pan. On medium-low heat, fry the tofu until it browns. It’s important that the heat is relatively low, so the tofu doesn’t stick to the pan. Set aside for now.
Stir Fry Preparation
  • Add the sauce ingredients into a small bowl and set aside.
  • Place cashews in a pre-heated oven and bake/roast for 5 minutes at 325 degrees. Turn off oven but let cashews continue to roast.
  • In a new frying pan, heat up the rest of the canola oil at medium-high. Add the garlic, ginger, the white part of the green onions, and the red chilies, and sauté for a few minutes. Cut the red chilies in half to make it hotter.
  • Add the tofu again, and continue to sauté, working the sauce slowly into the pan, allowing it to caramelize, until the ‘tofu chicken’ turns to golden brown.
  • Lastly, add the roasted cashews. If roasted properly, they won’t turn soggy, and this is the reason we add them when the dish is almost done. Finally, add the remaining green onions, sauté and mix thoroughly.

Note: This recipe is subject to change, as the ingredients list might go through a fine tuning process.
