Raw Vegan Lunch: A Simple Refreshing Salad

I haven’t posted any lunch photos in a long while, and I’ve (obviously) been recycling photos because I don’t want to keep adding to my web space.

Anyway, here’s a raw vegan lunch I had today, which to me is a simple refreshing way to energize oneself for the rest of the day.

Note: It would be a good idea to have a miso soup with this salad, especially on cold days.

Simple Raw Vegan Salad

This simple raw salad consists of the following:

1 bunch – raw baby spinach leaves (organic)
1 bunch – raw sprouts (organic, variety)
1 handful – organic blueberries
1 handful – chopped radishes
1 tbsp – cold pressed extra virgin olive oil
1 tbsp – balsamic vinegar

Isn’t this a simple, and beautiful salad?

You can easily make this a soup and salad lunch. Or if you are omnivore, add chicken or salmon?

The idea is to eat raw, to benefit from the enzymes that would otherwise be destroyed if that raw stuff were cooked.

Whether you are omnivore, vegetarian, vegan, raw foodist, or a flexitarian, it’s pretty important to eat as much raw living foods as possible and as nature intended it.

And again, raw sprouts are “living foods”. They are still alive and growing until you eat them!
