I just had an epiphany.
I don’t think I can eat wheat and any products with gluten in it.
So far this year, my diet has consisted of mostly vegan foods, much of it raw, and a few of it vegetarian (a little dairy and eggs) as I transition back into what I call a raw/vegan diet.
My initial, realistic goal was to go about 75% raw foods, 25% cooked vegan foods. But, now I’m noticing many grain foods like wheat bread cause me to have bloating, or feel bloated.
After reading much about Celiac Disease online, I’m pretty sure I don’t have it, but I have noticed how grains cause bloating.
Perhaps, being that I WAS 100% raw in the past, my body is telling me, “No, we can’t eat the grains anymore!”
So, I am now going to forego the grains as well.
I have to do more research, but I’m pretty sure I’m going to feel much better without the grains.
Anyway, what I notice gives me the energy are the big green salads and green smoothies!
There can be a period where someone can get really tired of eating salads day-in-day-out, but the green smoothies will help to intake more green foods in one sitting.
Regarding fruits, I love bananas, tangerines, oranges and lemons, and to some extent, apples. I know that an apple a day keeps the doctor away, so, I’m going to have to work on that… including at least one apple in my daily intake of food.
I’ve sort of gotten burned out on raw cacao smoothies. I do believe they should be an occasional treat, and currently I don’t crave any raw cacao smoothies at all!
So, I’ll have to add something like a strawberry smoothie to my breakfasts, which would include blueberries (a super food).
In summary, I’m going for a closer than expected raw food diet now, avoiding breads and grains that include gluten and see where that takes me.
