    In case you are just checking in and missed all the hoopla, I have been gluten-free since the beginning of the year, officially. But during this transition period I was noticing that bread and anything with flour in it had caused me bloating and feeling rather sluggish.

    It took me many years to realize this: Carbs = Energy!

    But, the current dietary establishment wants everyone to be on a low-carb, high protein diet!

    What does this tell me?

    The Meat and Dairy Industries are at it again, saying that carbs are bad for you and cause weight gain. But if you’re on a low-carb, high protein diet, meaning that you eat more high protein foods like dairy products, red meat, chicken, seafood and pork, that your going to lose weight.

    At the beginning of 2017, I started going gluten-free, with signs in 2016 that I was developing a gluten-sensitivity.

    Sure enough, as the months progressed, I felt so much better as a vegan who was also avoiding gluten. The problem was that now I was avoiding many foods I loved, such as bread.
