For A Nice Vegan Breakfast
This is my own Tofu Scramble, based on the recipe here.
- I just didn’t have the spinach and tomatoes on hand, but I did have the turmeric, curry powder, cumin and coriander, so I made it more of an Indian Tofu Scramble, which was perfectly fine for me.
- I used an Ice Cream Scooper to scoop the Steamed Rice and the Tofu Scramble, which I think is a good idea to use if you’re on a diet… portion control. It also makes the plate look nice for photography purposes.
- For the tofu I used medium firm tofu. Next time I’ll go with the extra firm tofu.
