Vegan Garlic Fried Rice with Vegetables




Here’s one of my favorite vegan recipes to make for breakfast, but you can have it any time of the day.

My Dad used to make a great skillet of fried rice on Saturdays, so that is the source of my inspiration. But instead of adding scrambled eggs, sausage and bacon, this recipe has lots of garlic and vegetables.

Ingredients

  • 3-4 cups – Day Old Rice (refrigerated overnight)
  • 2 tbsp – Extra Virgin Olive Oil (cold pressed)
  • 1 tbsp – Soy Sauce
  • 5-6 cloves – Garlic (minced)
  • 1 quarter – Yellow Onion (minced)
  • 3 stalks – Green Onions
  • 4-5 each – Mushrooms (chopped or quartered)
  • 1 tsp – Himalayan Pink Salt
  • 1 tsp – Ground Pepper

Instructions

  • Heat up a cast-iron skillet or frying pan with the olive oil on medium-high heat.
  • Chop stalks of green onions into 1/4 inch pieces, separating white part from green.
  • Add minced garlic and sauté until almost golden. About a minute.
  • Add white part of green onions, yellow onions and mushrooms, stir and sauté for another minute.
  • Turn heat to medium-low. Add the rice and continue to stir for a few minutes.
  • Add the soy sauce, salt and pepper. Continue to sauté and stir.
  • Finally. Turn heat to off. Stir and mix in the green part of the green onions.
