Zen and the Art of Making Almond Milk

I make almond milk almost everyday, and I’m amazed at how refreshing it tastes. And I’m 100% certain it tastes better than any cow’s milk or soy milk from the stores! And healthier!

Basic Instructions

  • Soak 1 cup of raw almonds in water overnight in the fridge.
  • Drain water and put almonds in a blender.
  • Add 2 pints of purified spring water.
  • Blend! And watch it transform into almond milk!
  • Pour the almond milk into a container through a nut bag, cheese cloth or some form of strainer.
  • Drink it fresh! Or refrigerate until ready to serve!

Additional Notes

For a smoother, creamier almond milk – blend one more time before refrigerating or serving. And save the pulp for making nut dip or nut cheese!

Last Night’s Gig

Last night I played a company Christmas Party at a fabulously beautiful home in the Carlsbad/La Costa area. It was outside and it was very, very cold. But I had a suit and a thick overcoat. Plus they had one of those outdoor heaters set up for us, and I wore these gloves with the “finger tips” removed so my fingers and hands wouldn’t completely freeze on me!

It was a great gig with Ignacio on congas and percussion, Nathan Mills on trumpet and bongos, and me on the piano… playing latin-jazz and mambo-style versions of Christmas songs!

Day 40, December 19

Breakfast

  • 1 – handful of olives
  • 1 – Cacao Banana Smoothie (with blueberries, hemp protein powder)

Mid-Morning

  • 1 – tangerine from my garden

Lunch

  • 1 – medium salad (baby spinach, lettuce, onions, tomatoes, cucumber,mushrooms, and broccoli sprouts with olive oil and vinegar)
  • 5 – wild mushrooms (with walnut dip)
  • 1 – Cacao Banana Smoothie (with 3 macadamia nuts, hemp protein powder)

Mid-Afternoon

  • 1 – tangerine from my garden

Evening

  • 1 – glass of wine at the gig

Late-Dinner

  • 1 – small salad (with lettuces, sunflower sprouts and olives with cold pressed olive oil and red wine vinegar)
  • 1 – small avocado

    Jim: For San Diego it was freezing last night at the Christmas party. Well, for us it’s a big deal when you can see your breath. haha…

    I just cut the fingers out midway on a pair of gloves, so I can feel the keys. The piano keys have been feeling really cold lately on my grand piano at home. So practicing was pretty painful. The “special” gloves really help warm the hands and fingers. :o)

    Whoa, didn’t know it was that easy to make almond milk. And a nut cheese/dip sounds delicious 🙂

    Have you tried placing your gloves in the oven before putting them on? That should keep you warm and toasty for at least a good few minutes before the cold seeps in.

    i JUST made this! carlos it is DELICIOUS and it's SOOOOO GOOOD. i warmed some up and used raw sugar and it tastes like warm milk! if only i had cookies now. 🙂 i am saving the rest for almond butter but what do you put in it to add flavour? i also thought the butter would make nice holiday gifts for my vegan friends. do you have any suggestions as to what i can add to it? 🙂
